Zhangjiajie's food scene is deeply rooted in Tujia ethnic cuisine — spicy, smoky, and full of bold flavors. As a foreign traveler, you'll find plenty to love, from sizzling hotpots to unique mountain delicacies.

Must-Try Local Dishes

1. Sanxia Guo (三下锅) — "Three Treasures Stew"

The signature dish of Zhangjiajie. A rich, spicy dry hotpot combining three ingredients — traditionally pork tripe, beef tripe, and lamb tripe, though modern versions may use walnuts, bacon, and tofu. It's smoky, numbing, and addictive.

2. Tujia Bacon (土家腊肉)

Smoked pork cured with salt and mountain herbs, then hung over wood fires for weeks. Sliced thin and stir-fried with garlic sprouts or steamed — it's the ultimate Tujia comfort food.

3. Grilled Fish (烤全鱼)

Fresh fish from local rivers, grilled over charcoal with cumin, chili, and Sichuan peppercorns. Often served on banana leaves at outdoor restaurants.

4. Stone Ear Mushroom (石耳)

A rare fungus that grows on cliff faces in the Zhangjiajie mountains. Often cooked in soups or stir-fried with eggs. Mild flavor with a unique chewy texture.

5. Rice Noodles (米豆腐 / 米粉)

Breakfast staple. Soft rice noodles served in a spicy broth with pickled vegetables, minced meat, and chili oil. Look for street-side shops with long queues of locals.
